A friend of ours, Mario Maccaferri, has a strong passion for Pizza Pie. Let's say it's an obsession. His family came the way of Louisville from Italy, through New York. Mario one day said, in his quest for the perfect Pizza Pie, "you're the Pie Kitchen, why not make Pizza Pie"?

After several no's, Mario finally convinced us by the best way any true food aficionado would. He decided to convince us by making his Pizza Pie and sampling us on it. Let's just say that he won us through our stomachs!

So we set out to buy a stone hearth oven. We worked 9 months in the kitchen. Now we are ready to bring Pizza Pie to the Pie Kitchen. We make ours like a Neo-Neopolitan Pizza Pie. In Italy it is simple, yet sophisticated. It is about the dough as much as the cheese and the tomatoes. We fresh make our dough everyday. A traditional dough, which is a tradition older than Louisville, of simplicity yet the finest list of ingredients. The list is short, though focused on excellence. Pizza sauce? No way! Fresh Italian tomatoes are pureed and baked on the pizza.

The Dough:
We make the dough from scratch using ingredients traditionally found in a Neo-Neopolitan style of pizza. In this tradition we punch it out as artisans have for hundreds of years. We do not roll the dough as that makes it tough, we do not press it either. We bake only in a stone hearth oven which in return makes for a crisp yet light crust.

The Cheese:
We use whole milk mozzarella with buffalo mozzarella for that added smoothness and richness to an already supreme whole milk mozzarella. Buffalo is a delicacy seldom used due to cost and availability, it is considered the most flavorful and best for pizza.

We added a few touches of artisanship with the ingredient toppings, we couldn't resist. We hope you enjoy, we sure have!
